Calpain and cathepsin activities in post mortem fish and meat muscles ArchiMer
Cheret, Romuald; Delbarre Ladrat, Christine; De Lamballerie Anton, Marie; Verrez-bagnis, Veronique.
Post mortem tenderization is one of the most unfavourable quality changes in fish muscle and this contrasts with muscle of mammalian meats. The tenderization can be partly attributed to the acid lysosomal cathepsins and cytosolic neutral calcium-activated calpains. In this study, these proteases from fish and bovine muscles were quantified and compared. The cathepsin B and L activities were in more important amounts in sea bass white muscle than in bovine muscle. On the other hand, cathepsin D activity was 1.4 times higher in meat that in fish muscle, while cathepsin H was negligible in both muscles. Calpain activities were similar in both types of muscle. Moreover, calpastatin (calpain endogenous inhibitor) level is 3.9 times higher in sea bass white...

Can weight/length relationship predict size at first maturity? A case study with two species of Characidae Neotropical Ichthyology
Fontoura,Nelson F.; Jesus,Anamélia S.; Larre,Gabriel G.; Porto,Juliana R..
A weight/length relationship was established for Astyanax jacuhiensis (Cope, 1894) (n = 370) and Cheirodon ibicuhiensis Eigenmann, 1915 (n = 701), from samples taken monthly in Fortaleza Lagoon, Cidreira, Rio Grande do Sul, from December 1991 through November 1992. Both species showed a polyphasic allometric growth pattern, each stanza described by an independent power equation controlled by a switch function. For C. ibicuhiensis, this change in the growth pattern occurred at 2.948 cm standard length (SL), close to published sizes for the attainment of female maturity. The change in the growth pattern of A. jacuhiensis (SL = 3.481 cm) was below the predicted size at first maturity, and merits further investigation. Although not conclusive, our data suggest...

Abstract: The objective of this work was to determine the effect of photoperiod on the cannibalism, growth, and body composition of giant trahira (Hoplias intermedius) juveniles. A completely randomized design was employed, with four photoperiods - 0L:24D, 6L:18D, 12L:12D, and 18L:6D, hours of light (L): dark (D) - and four replicates, for a period of 90 days. The analyzed parameters were: cannibalism, growth in weight and length, food consumption, feed conversion, protein efficiency rate, muscle growth, and body composition (moisture, lipid, ash, and crude protein). Fish from the 12L:12D photoperiod showed the highest survival rate and no cannibalism, as well as a great uniformity for length and mass values at the end of the experiment. The best...

Caractérisation du comportement chimique du complexe otosac-otolithe et réaction à des perturbations induites. ArchiMer
Edeyer, Anaick.
Teleost fish have the capacity to record in their otoliths, calcareous concretions located in the inner ear, the principal events (environmental and physiological) which punctuate their life. Otolith is made of CaC03 deposits on a protein matrix according to a circadian rhythm. Due to the quasi irreversibility of this process, otoliths can be compared to biological archives largely used to apprehend the fish ecology. The otolith bathes in the endolymph, a medium in which all the precursors of otolith formation forward. The endolymph chemical analysis revealed a heterogeneity of its principal components (proteins, total C02 and total Ca) which origin lies in the non uniform spatial distribution of the ionocytes in the saccular epithelium. Thus, in...

Challenge of pacu (Piaractus mesopotamicus) fed diets supplemented with vitamins C and E by Aeromonas hydrophila under different temperature Arq. Bras. Med. Vet. Zootec.
Garcia,F.; Moraes,F.R.; Martins,M.L..
Pacu Piaractus mesopotamicus fed diets supplemented with three vitamins C and E levels (zero, 250, and 500mg vitamin/kg diet) were challenged with Aeromonas hydrophila under different temperatures. Fish were kept in 300L plastic tanks and fed during the first 60 days with diets without vitamins C and E, in an attempt to reduce vitamin sources. After this period, fish were maintained at an initial density of 14 fish/tank and test diets were offered during 60 days. At the end of the experiment, all fish were infected with 6×10(6)CFU of A. hydrophila/fish, intraperitoneally injected. No interaction of dietary levels of vitamin C vs. E on mortality was observed. Supplementation with vitamins C and E did not decrease the mortality rate of fish challenged with...

Change in physical and chemical characteristics related to the binomial time-temperature used in sous pasteurization see Tambaqui (Colossoma macropomum) Arq. Bras. Med. Vet. Zootec.
Kato,H.C.A.; Lourenço,L.F.H.; Araújo,E.A.F.; Sousa,C.L.; Joele,M.R.S. Peixoto; Ribeiro,S.C.A..
The goal of this study was to evaluate sous vide fish and assess the influence of time and temperature on the pasteurization process through quality parameters. The raw material (tambaqui fillets) and the sous vide underwent physical, physicochemical, and microbiological analyses. A sauce was prepared containing soy sauce, water, horseradish and garlic flakes. The product's pasteurization parameters of time and temperature were defined according to a 22 central composite rotatable design (CCRD), and the dependent variables were water holding capacity (WHC) and instrumental texture aiming at obtaining high WHC values for the product to maintain the desired juiciness. The microbiological analysis required by legislation have indicated that the fish fillets...

Changes in the diet composition of transitory fishes in coastal systems, estuary and continental shelf BABT
Chaves,Paulo T. C.; Umbria,Simone C..
The feeding habits of five species of teleosts in the southern coast of Brazil were analyzed comparatively between estuary and continental shelf. The displacement between the two sites caused expressive qualitative alterations, the proportion of different items varying from 50% in the diet of Micropogonias furnieri to 89% in Isopisthus parvipinnis. In the group of species, 57% of the items were exclusive to one of the environments and, within the three most common items in the estuary - fish, Polychaeta and plants, only the former was also among the most common items in the shelf. In spite of these differences, the high spectrum of items in both environments and the nature of the item that was most consumed in each one, indicate that there was a certain...

INTRODUCTION: The Dover Strait (Figure 1) connects the North Sea to the English Channel. Here, northern France and South-East England are at their closest. This narrow corridor, one of the world's busiest straits for maritime shipping, is a key economic area for numerous activities, such as leisure and tourism, international ports and shipping, plus the exploitation of living or abiotic marine resources. This area is a significant resource for fisheries because many commercial fish species are abundant there, but also because of the presence of nursery and spawning areas and migratory routes linked to specific environmental characteristics. The vulnerability of these resources, which are subjected to strong anthropogenic pressures, has brought together...

Chromosomal differentiation between populations of Oligosarcus hepsetus (Teleostei, Characidae) from small tributaries at opposite margins of the Paraíba do Sul river (Brazil) BABT
Centofante,Liano; Bertollo,Luiz Antonio Carlos; Moreira-Filho,Orlando.
Cytogenetic analyses were carried out in two populations of Oligosarcus hepsetus from tributaries at opposite margins of the Paraíba do Sul river. The same diploid number was observed in both populations (2n=50), but they showed remarkable differences related to karyotype formula and distribution of rDNA sites as revealed by silver nitrate staining and in situ hybridization with 18S probes. The results suggested that the main channel of the Paraíba do Sul river acted as barrier to gene flow between populations.
