Post mortem tenderization is one of the most unfavourable quality changes in fish muscle and this contrasts with muscle of mammalian meats. The tenderization can be partly attributed to the acid lysosomal cathepsins and cytosolic neutral calcium-activated calpains. In this study, these proteases from fish and bovine muscles were quantified and compared. The cathepsin B and L activities were in more important amounts in sea bass white muscle than in bovine muscle. On the other hand, cathepsin D activity was 1.4 times higher in meat that in fish muscle, while cathepsin H was negligible in both muscles. Calpain activities were similar in both types of muscle. The present study describes Camallanus maculatus n. sp. (Nematoda: Camallanidae) from Xiphophorus maculatus (Osteichthyes: Poecilidae) collected in an ornamental fish farm in São Paulo State, Brazil. Thirty-three out of 40 examined fish were parasitized (82% prevalence) with mean intensity of 2.8 (1-20). Male specimens were 3,500µm total length and females 7,100µm total length, provided with orange-brown buccal capsule and two developed tridents. Males showed two unequal spicules, gubernaculum absent and females with vulva situated in the middle of the body. A weight/length relationship was established for Astyanax jacuhiensis (Cope, 1894) (n = 370) and Cheirodon ibicuhiensis Eigenmann, 1915 (n = 701), from samples taken monthly in Fortaleza Lagoon, Cidreira, Rio Grande do Sul, from December 1991 through November 1992. Both species showed a polyphasic allometric growth pattern, each stanza described by an independent power equation controlled by a switch function. For C. ibicuhiensis, this change in the growth pattern occurred at 2.948 cm standard length (SL), close to published sizes for the attainment of female maturity. Abstract: The objective of this work was to determine the effect of photoperiod on the cannibalism, growth, and body composition of giant trahira (Hoplias intermedius) juveniles. A completely randomized design was employed, with four photoperiods - 0L:24D, 6L:18D, 12L:12D, and 18L:6D, hours of light (L): dark (D) - and four replicates, for a period of 90 days. The analyzed parameters were: cannibalism, growth in weight and length, food consumption, feed conversion, protein efficiency rate, muscle growth, and body composition (moisture, lipid, ash, and crude protein). Dans le but de caractériser phénotypiquement et biologiquement la population de sandre (Sander lucioperca (L, 1758)), et de détecter une éventuelle variabilité entre les sexes, une étude des variables méristiques et morphométriques ainsi que la croissance, a concerné 133 mâles et 166 femelles issus de la retenue de barrage de Nebhana. Le choix des variables méristiques et morphométriques a été décelé à partir de travaux bibliographiques montrant un taux important de variabilité chez les poissons marins et d'eau douce. The goal of this study was to evaluate sous vide fish and assess the influence of time and temperature on the pasteurization process through quality parameters. The raw material (tambaqui fillets) and the sous vide underwent physical, physicochemical, and microbiological analyses. A sauce was prepared containing soy sauce, water, horseradish and garlic flakes. The feeding habits of five species of teleosts in the southern coast of Brazil were analyzed comparatively between estuary and continental shelf. The displacement between the two sites caused expressive qualitative alterations, the proportion of different items varying from 50% in the diet of Micropogonias furnieri to 89% in Isopisthus parvipinnis. In the group of species, 57% of the items were exclusive to one of the environments and, within the three most common items in the estuary - fish, Polychaeta and plants, only the former was also among the most common items in the shelf. The present work aims to update a series of information about the regional fishing production, by presenting and characterizing the contribution of the different sub-systems of the Amazon basin to the catch landed at the main fishing market of Manaus, Brazil, from 1994 to 1996. Collectors specifically hired for this function registered key information on the fisheries. Thirty nine types or groups of fish were found in the fishing production landed. Fishing is one of the oldest human activities in the Pantanal of Mato Grosso in Central Brazil. In the of Bento Gomes River Basin (Pantanal of Poconé) the presence of fishermen is very common. The objective of this study is to describe the fishing activity in the basin in view of the elaboration of proposals for the sustainable use of this natural resource. Of the 256 fishermen that were registered most are fishing for their subsistence (92%) and the rest (8%) are occasional fishermen (locally called "de lufada" fishermen). Aim The spoilage potential of 28 bacterial strains isolated from spoiled raw yellowfin tuna was evaluated. Methods and Results Bacterial species were inoculated in irradiated tuna matrix. Chemical changes, bacterial growth and sensory quality were monitored during aerobic storage at 8°C. Pseudomonas spp., Enterobacter spp. and Escherichia hermanii had no spoiling effect. Brochothrix thermosphacta and Carnobacterium divergens/maltaromaticum developed moderate unpleasant odors. Hafnia paralvei and Serratia spp. released strong off-odors (pyrrolidine, sulfur/cabbage). The acute intoxication of Cypermethrin in Silver Catfish (Rhamdia quelen) was evaluated. Animals weighing 56.67±4.43g and measuring 18.92±1.16cm were exposed to sublethal concentrations of Cypermethrin for the species in hydrological conditions during 96 hours. A total of 52 fish divided into three groups were used and received the following concentrations of Cypermethrin: 0 (n=12); 1.5 (n=20) and 2.5 (n=20)mg/L.
